Easy Quinoa Salad

This is an easy recipe for a gluten free quinoa salad. It’s a quick side dish that’s perfect for a summer meal.



200g quinoa

3 tbsp olive oil

2 peppers (red, yellow or mixture), decided and cut into chunky long wedges

1 red onion (cut into 1cm thick round slices)

3 unpeeled garlic cloves

200g baby courgette, halved lengthways

A pinch of sugar

1 lemon (both zest and juice)

200g pack feta cheese

Small pack flat-leaf parsley


  1. Cook the quinoa by following the instructions mentioned on the pack. Drain and set aside.
  2. Heat oven to 350 °F. Toss the peppers and onions with seasoning and 1 tablespoon of the oil on a roasting tray. Now roast for 15 minutes.
  3. Then add garlic and courgettes and roast for another 15 minutes.
  4. Squeeze out the garlic cloves from their skins and mash them with the seasoning. Throw in lemon juice and zest, parsley, the remaining oil, and sugar.
  5. Add cooked quinoa and toss together with roasted vegetables.
  6. Crumble over the feta, toss again and serve.
