Pan-seared steak is a classic steakhouse dish that is made in a similar way to a steak au poivre. The most common version of this dish is made with seared medallions of beef, but the recipe I present today is a great variation on that theme.



1 pound sirloin steak, about 1/2 inch thick

½ tsp ground pepper, divided

½ tsp salt, divided

4 crushed garlic cloves

2 tbsp oil

3 sprigs fresh sage

5 sprigs fresh thyme

16 cups chopped escarole (about 1 pound)

1 sprig fresh rosemary


  1. Sprinkle steak with 1/4 teaspoon pepper and salt.
  2. Heat a large cast iron and add steak. Cook one side for 3 minutes or until charred.
  3. Turn the steak and add oil, thyme, garlic, rosemary, and sage. Cook for 3-4 minutes and keep stirring the herbs occasionally.
  4. Your steak is ready. Thinly slice the steak and serve with the stir fried escarole and crispy herbs.
