Lemon Cream Chia Pudding with Oat Milk

This recipe is a healthy and delicious way to start the day or enjoy it as a dessert. It’s packed with fiber, protein, and omega 3 fatty acids and the chia seeds make it extra creamy.



Chia Pudding Layer

1 Cup Oat Milk

1/4 Cup Chia Seeds

2 tbsp Maple Syrup

Zest of 1 Lemon

1/4 tsp Sea Salt

1/4 tsp Vanilla Extract

Lemon Cream Pudding Layer

1/2 Cup Oat Milk

1 Cup Raw Cashews

2 tbsp Lemon Juice

2 tbsp Maple Syrup

1/2 tsp Lemon Extract

1/4 tsp Turmeric


  1. Take a bowl and mix all the chia pudding layer ingredients in it for a minute until everything is combined.
  2. Place this mixture in the refrigerator for 3 hours or overnight.
  3. Soak the cashews for 30 minutes in boiling water, then drain.
  4. Now blend all the lemon cream pudding ingredients in a blender on high until silky smooth.
  5. Take 3 small jars (glasses) and split the chia pudding mixture into it.
  6. Then pour the lemon cream pudding layer on top of the chia pudding layer and place the jars in the refrigerator for 3 hours before eating.
